Nutritious Medley Muffins, A Superfood Packed Breakfast

Don’t you love a good muffin? Yummmmm! But It can be hard to find a nutritious muffin recipe that is delicious, full of  wholesome ingredients and that can be made ahead of time. Many muffins are really just cake passed off as a breakfast food! And honestly, my kids eat enough sweets as it is!  I don’t want them starting their day with dessert!

Medley muffins are packed with superfood goodness from pumpkin, oats, coconut oil and even flax seed (optional) to make the perfect start to your child’s day (and yours too)!!  These muffins remind me a little of the baby recipes that I would make when my oldest son was just starting to eat solid food.  You know the ones? The baby cookbook authors find every way possible to stuff as much nutrition into each recipe so we can feel good about giving it to our little ones.  Well, that’s exactly how I feel about these nutritious Medley Muffins!  I get so excited knowing that my kiddos are getting little doses of all of these awesome ingredients! 





A More Nutritious (and Delicious) Start To Your Day

So often, our go-to breakfast options are high in sugar and simple carbohydrates.  Those things won’t keep us full and don’t supply our bodies with of the nutrients that we need.  The pumpkin, oats and flax seed meal all add fiber (which MANY people (especially kids) don’t get enough of). The fiber will aid in digestion and help you feel fuller for longer! The added fruit make them moist and just sweet enough. And don’t worry, even if you aren’t a pumpkin fan, I have a feeling you’ll never even notice it with the “medley” of flavors included.

The addition of coconut oil helps your family start the day with a good dose of healthy fats.  Coconut oil boosts the immune system, improves memory and brain function, and improves energy and endurance!  All of these benefits for you and your kiddos before 9am? Don’t you feel like a rockstar!?!

These awesome Medley muffins are one of the all time favorite nutritious muffin recipes that I have ever found.  I found these muffins on a blog that I love called, Gimme Some Oven, several years ago. I have wanted to share this recipe here on The Sweetest Part for a while now.  However, I wanted to be sure that I had permission especially since this is not recipe that you will find just anywhere.  So, a month or so ago I contacted Ali, the author of Gimme Some Oven, and she graciously allowed me to use her recipe here (I did make some slight variations).

Now don’t let the list on ingredients intimidate you!  There are quite a few listed, but think of the oats, dried cranberries and nuts as just mix-ins!  And the pumpkin, applesauce, and banana all add moisture and give these muffins a sweetness without a lot of added sugar!  It’s totally doable, I promise!!!

Nutritious Medley Muffins

These delicious muffins are packed with lots of healthy superfoods that will have you are your kids starting your day off on the right foot!

Ingredients

  • 1.5 cups whole wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 cup flax seed meal
  • 1/2 cup coconut oil, melted
  • 3/4 cup coconut sugar
  • 3/4 cup pumpkin puree
  • 1/3 cup milk of your choice
  • 1/3 cup applesauce
  • 2 bananas, ripe & smashed
  • 1 tsp cinnamon
  • 1 egg
  • 1 cup oatmeal quick or old-fashioned
  • 1 cup dried cranberries may substitute raisins or dried blueberries
  • 1/2 cup nuts, chopped may use nuts of your choice (I chose pecans)

Instructions

  • Preheat oven to 350°.
  • Measure flour, salt, baking soda, and flax meal into a medium bowl and mix well.
  • In a larger bowl, mix coconut oil, coconut sugar, pumpkin, milk, applesauce, smashed bananas, eggs and cinnamon until mixed thru.
  • Begin to add the dry ingredients from step 1 to the wet mixture a cup at time. Continue until all of the flour mixture is well incorporated into the wet mixture.
  • Fold in oatmeal, dried cranberries and nuts until mixed thru.
  • Fill each muffin tin 2/3 full and bake for 15-20 minutes on 350°.
  • The muffins may be slightly soft when first brought out of the oven, allow them to rest in pan for 5-10 minutes before removing them to cool.

Freezer Tips for These Nutritious Medley Muffins

After baking your muffins, allow them to cool for 5-10 minutes in the pan. Then cool them completely on a wire cooling rack.  Once the muffins are cool, you can place them on a sheet pan or large plate with some space between each one. Put them in the freezer until just frozen thru.  You may then remove the muffins from the pan and place them in a freezer bag and return them to the freezer.

This method is called flash freezing. Flash freezing will allow you to remove only one muffin at a time without them sticking to each other. This is a great tip for freezing many different foods! 

When ready to remove these muffins from the freezer, you may bring them back to room temperature.  If you choose to defrost them in the microwave, set your microwave to the shortest defrost setting. Check the muffins frequently because microwaving can dry out your muffin quickly.

Most of the time your muffins will come out of the microwave after being on the defrost setting perfectly warm, just like they were freshly baked!  I hope you and your whole family will love these muffins as much as we do!
