Nutritious Medley Muffins

These delicious muffins are packed with lots of healthy superfoods that will have you are your kids starting your day off on the right foot!

Ingredients

  • 1.5 cups whole wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 cup flax seed meal
  • 1/2 cup coconut oil, melted
  • 3/4 cup coconut sugar
  • 3/4 cup pumpkin puree
  • 1/3 cup milk of your choice
  • 1/3 cup applesauce
  • 2 bananas, ripe & smashed
  • 1 tsp cinnamon
  • 1 egg
  • 1 cup oatmeal quick or old-fashioned
  • 1 cup dried cranberries may substitute raisins or dried blueberries
  • 1/2 cup nuts, chopped may use nuts of your choice (I chose pecans)

Instructions

  • Preheat oven to 350°.
  • Measure flour, salt, baking soda, and flax meal into a medium bowl and mix well.
  • In a larger bowl, mix coconut oil, coconut sugar, pumpkin, milk, applesauce, smashed bananas, eggs and cinnamon until mixed thru.
  • Begin to add the dry ingredients from step 1 to the wet mixture a cup at time. Continue until all of the flour mixture is well incorporated into the wet mixture.
  • Fold in oatmeal, dried cranberries and nuts until mixed thru.
  • Fill each muffin tin 2/3 full and bake for 15-20 minutes on 350°.
  • The muffins may be slightly soft when first brought out of the oven, allow them to rest in pan for 5-10 minutes before removing them to cool.
