Confetti Quesadillas: Veggie-Filled Deliciousness That You & Your Kids Will Love!

You may have heard that “a way to a man’s heart is thru his stomach.”  Of course, this may not be true of all men, but it is most definitely true for my husband! When we were first dating, I would cook for him on occasion and these veggie-filed quesadillas were one of his favorites!

I have always enjoyed cooking and boy does my husband love eating!  He gets kind of teased for his BIG appetite (like the time he went in a restaurant and asked for a dozen eggs for breakfast- no joke)!

I have been making these “confetti” quesadillas since we started dating . They are fairly simple to make and you can add as many veggies as you like, or leave out the ones you don’t! These veggie quesadillas have even become a favorite for our extended family!

I have to confess that since we have had kids, I have started making more plain chicken quesadillas (maybe to avoid the grumbling from the picky eaters?).  Well, the other day I made these again with all of the veggies and WOW!

We’ve been missing out!  I think I’m going to have to re-brand these to my kids with their fun name!  Sometimes the simplest things will help kids be more open minded when trying new food!

If you are not a fan of fresh mushrooms or onions, you can always saute them in a little butter before making your quesadillas.  I, myself, love all of the freshness in these quesadillas with the raw veggies!  I hope you love this quick and delicious meal as much as we do!





Make a Memory!

Let one of your kiddos help you chop some of the veggies (check out these safe-for-kids kitchen tools) and make these delicious quesadillas.  Who knows, maybe they will be more willing to try the quesadillas with the vegetable if they help make them!

Have A Party!

Here’s how to round out this awesome meal to make it a full-fledged feast!

  • Serve Chips, Salsa, Guacamole, and/or queso for appetizers (have colorful bowls for each sauce). Don’t forget the sour cream for the quesadillas!
  • Make quesadillas ahead of time (make a few with just chicken for the picky eaters), & keep warm on a cookie sheet in a 200° oven (you can stack them).
  • Serve with these awesome dessert which EVERYONE will love!!!

These awesome Carmelitas from Averie Cooks are SOOOOOOO GOOD!!!! And they aren’t hard to make! Make them a little ahead (you don’t want them straight out of the oven-they are like lava), but warm is awesome!  Serve with ice cream and watch your guests eyes roll back in there head as they go into a sugar coma!
