Ingredients
1 egg
1 cupmilk
2 tbspoil
1/2cupcanned pumpkin puree
1 cupall purpose flour
1tbspcoconut sugarUse more sugar if serving without syrup
1tbspbaking powder
1/4tspsalt
1/4tsp nutmegI use a little less!
1/4 tspcinnamon
1apple, peeled, cored, and chopped
2tbspbutter for the griddle
Instructions
Mix all wet ingredients together, including pumpkin.
Mix flour, baking soda, salt, and spices together.
Slowly add the dry ingredients to the wet ingredients (about 1/3 of the total flour mixture at a time) and mix well.
Gently fold in the chopped apples.
Melt about 1/2 tablespoon of the butter on the griddle (set to 300 degrees). Pour about 1/2 cup of batter onto the griddle and allow to cook until edges have set and bubbles form in the middle, then flip.
Continue melting a small amount of butter onto griddle before each batch.
Notes
Ideas for toppings: maple syrup, butter, chopped apples, cooked apples or apple pie filling, pecans, walnuts, (peanut butter- my favorite!) or whipped cream!
