Pumpkin Apple Pancakes

Equipment

  • griddle or large nonstick pan

Ingredients

  • 1 egg
  • 1 cup milk
  • 2 tbsp oil
  • 1/2 cup canned pumpkin puree
  • 1 cup all purpose flour
  • 1 tbsp coconut sugar Use more sugar if serving without syrup
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg I use a little less!
  • 1/4 tsp cinnamon
  • 1 apple, peeled, cored, and chopped
  • 2 tbsp butter for the griddle

Instructions

  • Mix all wet ingredients together, including pumpkin.
  • Mix flour, baking soda, salt, and spices together.
  • Slowly add the dry ingredients to the wet ingredients (about 1/3 of the total flour mixture at a time) and mix well.
  • Gently fold in the chopped apples.
  • Melt about 1/2 tablespoon of the butter on the griddle (set to 300 degrees). Pour about 1/2 cup of batter onto the griddle and allow to cook until edges have set and bubbles form in the middle, then flip.
  • Continue melting a small amount of butter onto griddle before each batch.

Notes

Ideas for toppings: maple syrup, butter, chopped apples, cooked apples or apple pie filling, pecans, walnuts, (peanut butter- my favorite!) or whipped cream!
