The Best Ever: Easy Cake Recipe

A wonderfully moist, delicious cake that can be whipped up & in the oven in 10 minutes!

Ingredients

  • 1 box cake mix flavor and brand of your choice (I prefer Duncan Hines). Sift if you desire... I don't! =)
  • 1 box (small) instant pudding
  • 2/3 cup vegetable oil
  • 4 eggs
  • 1/2 cup water
  • 1/2 cup buttermilk I usually use whole milk with a squirt of lemon
  • 1/2 cup sour cream
  • 3 tbsp self-rising flour (for yellow and white cake mixes) Optional, but especially important for yellow cake mixes that seem to come out very heavy and pound cake like! =)

Instructions

  • Mix all ingredients together. Your batter will be very thick.


  • Bake according to box time based on the type of pan you are using, but you may have to add an extra couple of minutes. (see note below about oven temperatures)
  • Pour batter into prepared pan(s). Prepare with Baking spray or vegetable oil and flour. You may also choose to cut a parchment paper round for the bottom of a layer cake to help ensure that your cake releases without difficulty.

Notes

It's always a good idea to know how your oven bakes (I have to turn my oven down by about 25 degrees). You can purchase an oven thermometer for less that $5 at your local supermarket. If you don't want to go to the trouble, watch your cake a little more closely than usual.
 
* When using a yellow cake mix, I typically add 1-2 tablespoons of self-rising flour to the mix. Otherwise the cake can be a little dense-although still delicious! For some reason, the chocolate cake mix does not do this.
