Best Ever Cowboy Cookies

These delicious cookies are chocked full of all kind of yummy goodness, and you can change them up to fit your family's preferences!

Ingredients

  • 2 cups old-fashioned oats
  • 2 cups all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp cinnamon
  • 2 sticks salted butter softened
  • 1 cup packed brown sugar
  • 2/3 cup sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 2 cups chocolate chips
  • 1 cup walnut, chopped or your preference of nut

Instructions

  • Stir together the first 6 ingredients in a small bowl.
  • In a separate larger bowl, blend butter and both kinds of sugar with a mixer for 2 minutes.
  • Start slowly adding flour mixture to the butter mixture and incorporate well before adding more of the flour mixture.
  • Half at a time, add chocolate chips and walnuts.
  • Refrigerate dough for about 5 minutes before baking.
  • Bake at 350° for 12-15 minutes (watch your cookies closely until you know how your oven bakes, these are best when you taken them out when they are just starting to brown.

Notes

Variations
Coconut Cowboy Cookies- add 1 cup of flaked coconut.
Cranberry White Chocolate Cowboy Cookies- Replace one of the cups of chocolate chips with white chocolate chips and add 1 cup of dried cranberries.
Peanut Butter Cowboy Cookies- Add 1 cup of peanut butter to the butter and sugar and mix together. You can also replace one of the cups of chocolate chips with peanut butter chips if wanted.
Tuxedo Cowboy Cookies- Add 1 cup of sweetened flaked coconut and replace one of the cups of chocolate chips with white chocolate and use pecans instead of walnuts.
